The Kati Háfra-led Bolka Desszert Butik has won the second edition of the Dessert of Budapest competition with a delicious peach tart with a twist.
The peach and almond-flavored dessert comprises of a Sacher-style base made using almond flour and a caramel-chocolate mixture, an almond- and white chocolate-flavored créme patissier. The base is filled with two types of peach jam and then topped with a more traditional, nostalgia-inducing compote.
“We wanted a simple, easy-to-recreate dessert the audiences will instinctively take up a liking to. Something that doesn’t need lengthy explanations,” said the founder of the shop, Kati Háfra.
The Dessert of Budapest contest is held as part of the Sweet Days Budapest Festival. Founded by the Hungarian Chocolate and Sweets Organization in 2018, the contest introduces the work of up-and-coming gastronomy specialists to the broader public.
